I found this online a few years back and continue to make it because the flavor is great, it's paleo friendly and my kids love it!
Spicy Turkey Burgers
Ingredients:
20oz ground turkey
1 shredded carrot (I bought pre-shredded and used a good handful)
1/2 shredded zucchini (I use a whole one just make sure to soak up the extra fluid)
2 tsp onion powder
1/2 salt (I used kosher)
1/2 tsp garlic powder
2 tsp chili powder (cayenne for more spice)
1 egg
*you can also add hot sauce to suit your own taste*
I grated my zucchini, you could do this with the carrot as well. I chose to buy the pre-shredded carrots and just chopped it a little more. I suggest to let the zucchini sit on a paper towel to soak the excess water off, otherwise it can get too wet.
Add all seasonings, veggies, and meat. in a bowl and mix together.
Form your patties, making sure to not make them too much like a ball, they won't flatten, they will grill like that.
Roasted Butternut Squash
Ingredients:
1 butternut squash
Tablespoon or so (enough to lightly coat the squash) of Olive or Coconut oil
Sea/Kosher salt
I cut the squash the same as I do a pineapple. I quarter it, put it on its end and slice off the hard skin.
Chop and toss with your choice of oil and salt. You can add onions to this mixture as well, yummy!
Cover with foil and bake at 450degrees for an hour(+/-). You can remove foil the last 15minutes to release excess moisture.
I serve the burger on a bed of spinach .
